I was making some Raffaello candy the other day and I decided to keep some of the batter and transform it into some after eight candy. I remember being a big fan when I was eating classic food so I had to give it a try.
- 150 grams coconut flakes, no sugar added (5.2 oz)
- 125 ml coconut milk, no water added (4.5 oz)
- 1 tbsp mascarpone
- 100 grams melted butter (3.5 oz)
- Mint extract (2-3 drops)
- LC sweetener of choice
- 50 grams dark chocolate (1.75 oz)
Blend the first six ingredients. Oh, oops, I forgot to tell you how easy these are. Form squares or round candies then put them in the freezer. In the mean time, melt the chocolate. Prepare a baking sheet to glaze the mints. With a spoon, pour some melted chocolate onto the baking sheet, the size of the future after eight candy. Place a frozen candy onto the chocolate, then pour chocolate on top and cover the entire bar. Continue until you finish the whole batch. Enjoy the freshness!
Yields 30 round candies and 8 squares.
