Keto almond cookies with orange zest custard

I promised the other day another creamy recipe for filling the keto almond cookies, which are not actually cookies but I don’t have another name for them. This crust is so versatile you can actually fill it with the cream of your choice, as long as it fits your macros.

Ingredients custard:

  • 200 ml whipping cream
  • 3 yolks
  • 1 small tsp Konjac flour
  • vanilla extract
  • fresh orange zest

First, mix well the yolks with the Konjac powder. Add the orange zest and the vanilla extract and set aside. In a small pan, simmer the whipping cream. When it becomes hot, pour little by little into the yolk mixture and mix well after each pouring. This will help you bring the yolks to the same temp and avoid cooking the yolks. Pour the whole mix in the pan again and put it back on minimum heat, stirring continuously until it thickens. Let it cool then pour it into a piping bag and fill your keto almond cookies. Not cookies-cookies, but you get it. Enjoy!
