I was dying for some chocolate but the thought of going to a bakery shop after all the work I put last week to get to 50 kilos was killing me. I tried with some dark variety, but what do you know, my brain felt the lack of the sweetness. Had no other option that to create a new gooey and chocolatey recipe, to calm down. I therefore present you the most delicious keto brownies I ever made. Apparently I was in a good mood today.
- 4 eggs
- 2 tbsp dark cocoa
- 1 tsp rum extract
- 50 ml whipping cream
- 2 tbsp Tagatose
- 100 grams almond flour (3.5 oz)
Separate the eggs and beat the whites until stiff peaks, along with the granulated sweetener. In another bowl, mix the yolks with the rum extract, the cocoa and the whipping cream. Pour this mixture oven the egg whites and fold gently. In the end, add the almond flour and proceed with great care, in order to keep the bubbles inside. Pour the batter into a silicone tray (8″ by 8″) and leave it in the oven at minimum heat for about 20 minutes. Serve with mascarpone, whipped cream and berries. Enjoy!
