Keto Calzone

It’s pretty hard to replace pizza in a low carb diet, unless you use a dough premix. Even though they taste OK, no psyllium or cauliflower pizza crusts will ever make you feel you eat a real Italian dish. A few months ago, though, I tried and adapted one of the most tasty low carb pizza crusts I’ve ever had. No, scratch that, it was the best.

Either as a classic pizza crust or a calzone, this pizza dough is moist yet crunchy and full of flavor.


  • 150 grams shredded mozzarella
  • 4 tbsp almond flour
  • 2 tbsp coconut flour
  • 1 egg
  • spices (chilli, Parmesan, thyme, oregano)

Ingredients for the filling:

  • 10-15 slices of dried salami
  • 3 slices of smoked cheese
  • canned mushrooms


I used voided mozzarella, which is well drained, but I supposed you can also use buffalo mozzarella, kept in water, as long as you dry it before use. Put the shredded cheese in a heat-resistant bowl, along with the spices, and place them into the microwave oven, for about 1,5 minutes, at 400w. In the mean time, prepare the exact quantities of the two flours, since you will have to be very fast. After the mozzarella is melted, fold in the flour with a silicone spatula. Add the egg and fold it well. If you feel the dough is still moist, add one extra spoon of flour. Put the bowl back in the microwave oven for another 10 seconds, just enough to give it some elasticity. Prepare a baking sheet on your table, place the dough, then another baking sheet on top of it and start rolling the dough with a rolling pin. The dough should be 1-2 mm thick.


Imagine your dough split in three equal long parts. Keep the middle part intact and fringe the sides in 1 centimeter sections. Add the filling ingredients in the middle, then start braiding the previously cut sections. In the end, your calzone will resemble a traditional bread.

Keep it in the oven, at medium heat, for about 15 minutes. Check it often, since the mozzarella crust will change its appearance in no time. This keto calzone is incredibly tasty and filling, and you can either have it with some sugar free ketchup or a can of Greek yogurt. Enjoy!
