Keto cheese festive cake

Being addicted to cheese, I try to adapt on keto every single recipe that involves it. This festive cake couldn’t have been any different. As crazy as it sounds, I even managed to replace the sweet raisins the original recipes contains, and still have a great macros report.

Ingredients:

  • 400 grams unsalted buffalo cheese (14 oz)
  • 6 eggs
  • 3 tbsp sour cream
  • LC sweetener
  • 3 tbsp coconut flour
  • 20 grams goji berries (0.7 oz)
  • orange zest
  • rum extract
  • 3 tbsp warm water
  • 1 tsp baking powder

As you can deduce, I used the goji berries instead of raisins. Put them in the warm water, then pour some rum extract. They will get fluff and sweet by absorbing the flavor of the rum.

Shred the cheese and mix it with the eggs. Add the rest of the ingredients, one at a time, and mix well after each of them. Add the hydrated goji berries and pour the batter into a round cake pan. Cook it on minimum heat, for about 40 minutes or until it sets and the edges become golden brown. Enjoy a slice of this keto cheese festive cake with some whipping cream or powdered with a low carb sweetener and orange zest.
