Keto chocolate cookies

Since I baked the low carb cookies with orange zest and chocolate chips, I kept wondering if I would be able to make them all chocolate. Thus being said, I started to recreate the recipe, in order to get the imagined result.

I ditched some of the ingredients, I added others and in the end I got some gooey, sweet keto chocolate cookies .

Ingredients:

  • 250 grams soft cheese
  • 2 tbsp butter
  • 2 tbsp peanut butter
  • 3 small eggs
  • 2 tbsp black cocoa
  • 100 grams erythritol
  • 10 ml sweetener of choice
  • 5 ml rum extract
  • 100 grams almond flour
  • 1/2 tsp baking powder

I mixed the first three ingredients together, until smooth. Then added one egg at a time, and mixed well after each of them. I added the cocoa and gently incorporated in, in order to keep it in the recipient, and not in the air. I added the sweeteners and the rum and mixed a few seconds, until the batter became fluffy, just like a mousse. In the end, i folded the flour and the baking powder with a silicone spatula. I placed the batter on a cooking sheet with a spoon, leaving it to flow (at first, it will look like a messy marshmallow) and leaving 2-3 cm between the future cookies. I left them in the oven, at medium heat,  for about 10-12 minutes.

Since I ditched the protein whey powder, my keto chocolate cookies stayed fluffier than the orange zest ones. They work perfectly with a cup of Greek yogurt or a flavored tea. Enjoy!
