Keto chocolate tart

It had to be done in my kitchen, let’s face it. With a (recently) keto husband, who happens to love chocolate, it was only a matter of days. Or hours, as I found out today. Apparently, browsing my website is his thing when he gets bored, and my posts make him crave.

Ingredients:

  • 2 large eggs
  • 1 tsp dark cocoa
  • 100 grams almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp Konjac flour
  • LC sweetener of choice

Filling:

  • 80 grams dark chocolate, 85% cocoa
  • 200 ml whipping cream, lactose free
  • 3 eggs
  • LC sweetener of choice

Easy peasy! I mixed all the base ingredients until I got a steady, yet creamy dough. I placed it into my tart form and leveled it. I left it in the oven for around 20 minutes, at minimum heat, until the surface was set. At this point you have to take it out and let it cool.

In a pan, bring to the simmering point the whipping cream. Break the chocolate into tiny bites into the hot cream and stir continuously until it melts completely. In a bowl, beat the eggs with the sweetener, then fold the chocolate mix into the eggs. Pour this cream over the tart base and put it in the oven again, until small bubbles appear on the surface (about 20 minutes, minimum heat). I chose not to add any extracts because I wanted something to taste like pure chocolate and it was the perfect choice! Enjoy!
