When your significant other is on a diet and his birthday is just around the corner, you do not stop in his favorite bakery shop and order a cake. No, ma’am! You enter the kitchen and, a few hours later, you have the perfect keto dinner and the most delicious keto cupcakes, topped with chocolate ganache and orange zest.
- 3 eggs
- 3 oz melted butter
- 3.5 oz almond flour
- 3 tbsp cream cheese
- 1/2 tsp orange extract
- 1/2 tsp saffron baking powder
- 1 tbsp Truvia or other sweetener of choice
Ingredients for the ganache:
- 90 grams dark chocolate, 85%
- 6 oz whipping cream
- 1 tbsp LCHF spreadable chocolate cream OR LC chocolate syrup
- orange zest, SF confections
They are so easy to make, you cannot fail, and I just received a live verdict: “Oh, yummm!”. My job was clearly a success.
First of all, mix the eggs with the cream cheese until they soften. Add the orange extract, the sweetener and mix them well. With a spatula, fold in the almond flour and the baking powder, then pour the warm butter. Blend them until the butter in completely absorbed into the batter.
Prepare 10 silicone molds and put inside them cupcake papers. With a spoon, pour batter in each silicone mold a bit more than half. Believe it or not, they will rise. And shine, as the matter of fact! Leave them in the oven until they get golden.
In a resistant bowl, melt in the microwave or on bain-marie the chopped chocolate with the whipping cream and the syrup. I use both methods, although I only use the microwave on its minimum power, since chocolate can burn quickly in there. After the chocolate gets melted, mix well with a spatula until you will have a smooth cream. Put it in the freezer for 15-20 minutes, to set, then pour it into a piping bag and decorate your keto cupcakes. Sprinkle some orange zest over the chocolate et voila! You will get one happy husband and the pride you made him go through with the diet yet another day.
