After testing the celery fries in different combinations in the last few days, I decided to take my chances with a puree. It was a long shot, since I wanted to create something delicious, to make my husband forget about the mashed potatoes and fall in love with the keto mashed celery.
- 1 celery root, peeled and chopped
- 2 tbsp butter
- 3 oz liquid cream
- some pink salt
- goat cheese
- chilli flakes
Celery doesn’t boil as quickly as potatoes, so you will have to be patient on this. I boiled mine for a couple of hours, adding some water from time to time. I tested it with a fork and when it was ready, I put it in a big blender cup, added the butter and pulse it a few times. I poured the cream, then mixed it on high speed until it got fluffy and creamy. At the end, I gave it a few more spins, after adding the spices. I had mine with some goat cheese and some duck confit.
