Keto mille feuille with mascarpone cream

Traditionally, a mille feuille is a classic French dessert, made from puff pastry and filled with vanilla cream. Obvious, since keto lacks the gluten which helps the dough to create layers, I had to make each layer by hand, trying to obtain a good resemblance with the original stuff.


  • 4 eggs
  • 2 tbsp coconut flour
  • 1 tbsp LC sweetener
  • vanilla extract


  • 250 grams mascarpone cheese (8.5 oz)
  • 100 ml whipping cream (3.5 oz)
  • 1 tbsp LC sweetener
  • vanilla extract
  • 8 strawberries

In order to make the layers, mix the first four ingredients. I baked mine in a 8×8 inch silicone tray, and it yielded two feuilles, which I had cut in 6 equal parts. So, you can either divide the batter in two equal parts and cook it in smaller trays, like me, or cook it in your oven’s tray, then divide it in smaller slices (2×3 inches).

In a large bowl, mix the filling ingredients, except for the strawberries. Place the cream into a piping bag and fill the layers, alternating with strawberries. Finish with cream and a few slices of fruit. Enjoy a slice of heaven with this easy to make keto mille feuille dessert!
