Keto yogurt cakes

We all know the fluffy white cakes, made almost entirely from cream and yogurt, with touches of fruit. They are so light, yet fulfilling, I chose them at almost every birthday. But the sugar inside, even though it’s little, stops me from having them too often.

Ever since I discovered Tagatose as the best replacer for sugar, I recreated my old recipes, with the hope the results will be nothing but identical. And boy, they were!

Ingredients:

  • 240 grams Greek yogurt
  • 100 ml whipping cream
  • 50 grams Tagatose
  • 1 pack gelatin
  • 50 grams sour cherries
  • 50 grams mixed fruit berries
  • 12 keto lady fingers

In order to make the ladyfingers in keto style, just visit the Tiramisu recipe. You will find every step there, and you can even make more of them and preserve in a tight container. Thus being said, let’s make the creamy cream! Mix the first three ingredients together, until they get light and fluffy. Pour the gelatin into 1 spoon oh hot water and mix well, until it melts. Pour it over the cream. On the bottom of some silicone forms, put a couple of sour cherries and some ladyfingers, in order to hold the future cake. In the yogurt mix, pour some of the berries, including some sour cherries and fold them a bit. With a spoon, fill your silicone forms with cream. I got 6 cups of cake, you can get more or less, depending on the size of your forms. Put them in the fridge over night or until they set (at least 4 hours). You can serve them with fresh berries or whipped cream. Oh, stop feeling bad, they really don’t make you fat, they are keto yogurt cakes, even though they feel regular! Enjoy!
