Each passing day, I realize how easy it is to transform your favorite food into keto recipes. Today this happened again, with an amazing LCHF creme brulee, made with the brilliant tagatose. It has everything a creme brulee must have: honey-like syrup, a fine texture, caramel.
- 2 eggs
- 150 ml whipping cream
- 75 grams Tagatose
- vanilla extract
Things really are simple here: first, you have to melt around 50 grams of the sweetener. It will take longer than sugar and it also hardens faster, so be really quick. After melting it, pour in silicone forms around one teaspoon of it. In a large bowl, mix at high speed the cream and the two eggs, along with the remaining sweetener and the vanilla extract. Pour from the mix over the melted tagatose, into the silicone forms. Set the forms into a tray filled with water, then put it into the oven, at minimum heat, for around 45 minutes.
The silicone will allow the cakes to come out fast, in a perfect shape, so I cannot guarantee for another form material. But after all, the taste is what matters, right? And the taste is divine, indeed!
