Low Carb cheese muffins

I’m a salty junk food addict, I confess. After all, this is how I got fat: cheese pies, chicken strips, chips, popcorn, you name it. Of course, now I became a low carb junk food addict, topped with milk chocolate, once a month. I can’t help it and I actually don’t even want to, I go to the gym way to often to drop my monthly Milka or Lindt. :)

I first made these low carb cheese muffins last summer. Couldn’t find a decent recipe anywhere (by decent I mean with just a few ingredients) so I improvised something with my almond flour batter and a few extra goodies I had in the fridge.

Ingredients:

  • 80 grams almond meal
  • 3 eggs
  • 60 grams butter
  • 1/2 tsp baking powder
  • 1/2 tsp xanthan
  • mozzarella cheese
  • bacon
  • chives (optional)

I mixed the butter with the eggs, then added them to the dried ingredients (the flour, baking powder and xanthan) and I mixed them on low speed, getting a fluffy, sponge cake-like batter. I then added the chopped mozzarella and chives, I mixed them with a spoon, keeping the air inside the batter, then poured it into silicone moulds. On top of each muffin, I placed bits of bacon. I kept them in the oven for about 15 minutes, until golden. Enjoy them simple or use them as bread on your meals.
