Low Carb Chocolate Mousse

Incredibly easy to make, this low carb chocolate mousse seems to be kind of magic. Mixing a few liquid ingredients will result into a fluffy, full of flavor chocolate mousse, ideal to be eaten as such or as a topping for your low carb cupcakes.


90 grams dark chocolate 85% cocoa
100 grams butter
200 ml whipping cream
10 drops liquid sweetener
rum extract

Broke the chocolate into pieces, then put it in a bowl and add the butter. Melt them into the microwave for about 30 seconds, then mix them well. InĀ  a separate bowl, mix the whipping cream with a hand mixer. You can even skipped this part, if you want a more dense cream, since the mixing will only add air bubbles to the final product. Pour the hot chocolate into the center of the whipping cream bowl and start folding with a silicone spatula. In about 10 seconds, due to the temp difference, the mixture will start to gain consistence, forming a fluffy cream. You can mix your mousse with different types of nuts or consume it as such.
