I could have sworn I already shared with you this recipe, but apparently I didn’t. Maybe I felt like a while ago and forgot about it. Although there is nothing to forget about these tasty low carb crescent rolls.
I had mine filled with walnut halves, but you can add whatever keto ingredient you feel it will fit: dark chocolate chips, berries, protein pudding of choice and so on.
Ingredients:
- 100 grams drained mozzarella, shredded (1/2 cup)
- 10 ml low carb sweetener
- rum extract
- 1 raw yolk
- 4 tbsp almond flour
- 1 tbsp coconut flour
- nuts for filling
Just like I did on my keto calzone, I microwaved the cheese then folded the rest of the ingredients in. I formed four dough balls, then rolled them 2 mm thin, in a round form. I sliced it into 8 triangles and at the base of each of them, I placed one piece of walnut. Rolled them with my fingers and placed them onto parchment paper. I kept them in the oven for about 12 minutes, at medium heat, and served them with Greek yogurt. Talking about yum!
What an idea!!!!!:) The mozzarella gives an amazing cheesy taste to the dough, but not too salty! The preparation literally takes about 5 minutes + 10 at the oven, so you can have healthy croissants in like 15 minutes:)) Thank you!!xxx
