I remember having a whole summer, about 5 or 6 years ago, when I had almost every day french fries with cheese, sausages and bread. Huh, I wonder where did all those extra pounds came from… When I started LCHF, fries were out of the question and I actually never craved them. Some day, though, being a fan of fried veggies, such as zucchini, decided to try making some low carb fries out of a celeriac root I had in my pantry.
It turned out so good, I literally asked my friends to come over and try them. It doesn’t need much to make them and you can have them exactly like you would be eating the real stuff: with mayo, grated cheese or sugar-free ketchup.
- 1 celeriac root
- 300 ml cooking oil
- grated parmesan (optional and easy to replace)
I started by peeling the celeriac. It tends to be pretty hard, so you have to be patient with this one. After peeling, I cut it into 1.5 cm thick slices, then chopped each slice into “fries”. I brought the oil to the frying point, then added the fries and sprinkled salt on them.
Although the celeriac seems to be harder, it will soften quicker that potatoes. When they become golden and their “skin” starts to puff, its’ time to take them out of the pan. Pour some shredded cheese while they are hot and serve them with whatever you feel like. You cannot be wrong, I promise!
