Low Carb muffins with orange and vanilla

Smells like Christmas lately. All the cold, the new president in my country (Klaus, that is), the markets and mostly the malls. Since my love for Christmas is enormous, I had to give a try and create some low carb holiday treats.

The base for these low carb muffins is quite simple. It only requires four ingredients and the rest is up to each person’s imagination. This is actually the way in my kitchen came alive the chocolate muffins, the lemon cupcakes or the ones filled with mascarpone cream.

Ingredients:

  • 5 eggs
  • 100 grams almond meal
  • 100 grams melted butter
  • 1 tbsp baking powder
  • 2 spoons heavy cream
  • the juice from half an orange
  • orange zest from one big orange
  • 1 vanilla butter essence
  • 1 spoon coconut flour
  • 15 ml low carb sweetener

After mixing the wet ingredients together, I added the dry ingredients and folded them with a silicone spatula. We don’t want the air bubbles out, so this is the best way to keep them in. The batter is quite liquid, but have to fear, my dear! The oven will magically turn it into fluff and nectarious muffins. Thus, I poured with a spoon the batter into my moulds and put them in the oven for about 15 minutes. Of course, depending on the oven, you have to check them from time to time.
